  • Begin by bringing a large pot of salted water to a rolling boil. Add 8 ounces of penne or fusilli pasta, cooking until al dente, about 8-10 minutes. Drain the pasta and set aside.
  • In a spacious skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced chicken sausages, cooking for about 5–7 minutes until browned and heated through.
  • Once the sausages are browned, add 2 cloves of minced garlic to the skillet. Sauté for 1 minute until fragrant and golden, avoiding burning.
  • Add 2 medium zucchinis to the skillet, cooking for about 4–5 minutes until tender yet still slightly crisp.
  • Incorporate 2 cups of halved cherry tomatoes along with 1 teaspoon of dried Italian seasoning, salt, and pepper. Cook for about 3 minutes until tomatoes soften and release juices.
  • Reduce heat to low and gently fold the cooked pasta into the skillet, tossing until well coated with the sauce.
  • Sprinkle ¼ cup of grated Parmesan cheese over the mixture and toss until melted and evenly distributed.
