  • Preheat your oven to 375°F (190°C).
  • In a large skillet, add 2 tablespoons of olive oil over medium heat. Sauté minced garlic for 1 minute until fragrant.
  • Add 2 cups of cooked shrimp to the skillet and cook for 2-3 minutes until warmed through.
  • In a large bowl, combine sautéed shrimp with 1 cup ricotta, ½ cup Parmesan, 1 cup spinach, and 1 teaspoon Italian seasoning. Stir in half of the shredded mozzarella, season with salt and pepper.
  • Lay a flour tortilla flat and spoon shrimp mixture in the center. Roll tightly from the bottom up and repeat with remaining tortillas.
  • Pour a thin layer of Alfredo sauce into a baking dish and arrange the roll-ups seam-side down.
  • Pour remaining Alfredo sauce over the roll-ups, ensuring they're well covered.
  • Sprinkle remaining mozzarella cheese on top of the sauce.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbling and golden.
  • Garnish with freshly chopped parsley before serving.
