  • 2 whole acorn squash the star of the show
  • 2 tablespoons olive oil for roasting
  • salt to taste
  • pepper to taste

For the Filling

  • 2 whole apples peeled, cored, and diced
  • ½ cup walnuts chopped
  • ¼ cup dried cranberries
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons brown sugar
  • ¼ teaspoon salt
  • ¼ cup maple syrup for drizzling

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • Slice the acorn squash in half and scoop out the seeds. Brush with olive oil and sprinkle with salt and pepper.
  • Place the squash cut side down on a baking sheet and roast for 25-30 minutes.
  • Melt butter in a large pan over medium heat. Add diced apples, walnuts, and cranberries, cooking for 5-7 minutes.
  • Add cinnamon, nutmeg, brown sugar, and salt to the mixture, cooking for an additional 2-3 minutes.
  • Stuff the roasted squash halves with the apple mixture.
  • Drizzle maple syrup over the stuffed squash.
  • Return the baking sheet to the oven for another 15-20 minutes.
  • Remove from oven, let cool a few minutes, and serve.
