Cooking Steps

  • In a medium saucepan over medium heat, combine the chopped apples, granulated sugar, lemon juice, cinnamon, and nutmeg. Stir frequently and cook for about 10 minutes until the apples are soft.
  • Remove from heat and cool the apple mixture completely at room temperature or the fridge for faster cooling.
  • In a large mixing bowl, blend the cooled apple mixture with softened cream cheese until fully combined.
  • Gradually fold in the graham cracker crumbs until the mixture is thick enough to hold its shape.
  • Cover the bowl and chill in the refrigerator for about 30 minutes to firm up.
  • Once chilled, roll the mixture into uniform balls the size of walnuts and place on a parchment-lined baking sheet.
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals until smooth.
  • Dip each truffle into the melted chocolate, ensuring they are completely coated, then place back on the baking sheet.
  • Chill the truffles in the refrigerator for about 30 minutes or until the chocolate is set.
