  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch optional
  • 1 tablespoon water optional

Step-by-Step Instructions for Vampire Brownies

  • Preheat your oven to 350°F (175°C) and line a square baking pan with parchment paper.
  • In a large mixing bowl, whisk together granulated sugar, brown sugar, melted butter until well combined. Add eggs and vanilla extract; whisk until thickened.
  • Sift flour, cocoa powder, and salt into the wet mixture. Gently fold until combined.
  • In a medium bowl, combine cream cheese, sugar, egg yolk, and vanilla extract. Beat until smooth.
  • In a saucepan, cook raspberries, sugar, and lemon juice over low heat until softened. Strain for smooth sauce.
  • For thicker sauce, mix cornstarch and water in a small bowl, add to sauce, cook until thickened.
  • Pour half of the brownie batter into the baking pan, then dollop cream cheese mixture over it.
  • Drizzle raspberry sauce on top of the cream cheese layer and swirl gently.
  • Spread the remaining brownie batter over the top and smooth out.
  • Bake for 25-30 minutes. Use a toothpick to check for doneness, it should come out with a few moist crumbs.
  • Allow to cool at room temperature for at least 1 hour before cutting.
  • Lift out using parchment overhang, cut into squares, and enjoy!
