Preparation Steps

  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix well and press into a 9x13 inch baking dish. Chill for 30 minutes.
  • In a large mixing bowl, beat the cream cheese until creamy. Gradually add powdered sugar and vanilla extract, mixing until silky.
  • In a separate bowl, whip the heavy cream until soft peaks form, then add powdered sugar and continue whipping until stiff peaks occur.
  • Fold the whipped cream into the cream cheese mixture until well combined and fluffy.
  • Pour the cheesecake filling over the crust, smooth the top, and refrigerate for at least 4 hours until set.
  • In a small bowl, combine the strawberries and strawberry preserves, let soak for 15 minutes.
  • Once set, remove the cheesecake from the refrigerator, top with strawberries, cut into squares and serve.
