Step-by-Step Instructions

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  • Beat softened cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until fluffy.
  • Add eggs one at a time, mixing on low speed until just combined.
  • In a saucepan, combine strawberry puree, sugar, lemon juice, and cornstarch. Cook until thickened, about 5-7 minutes.
  • Pour half of the cream cheese mixture over the crust, drizzle half of the strawberry mixture, and swirl together.
  • Add remaining cream cheese filling and drizzle with remaining strawberry mixture, swirling again.
  • Bake for 60 minutes until the center is set but slightly jiggly. Cool in the oven with the door cracked for one hour.
  • Chill in the refrigerator for at least 4 hours or overnight before serving.
