Ingredients
  

For the Cheesecake

  • 8 ounces cream cheese at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries washed
  • 2 tablespoons all-purpose flour

For the Crust

  • 1.5 cups crushed graham crackers
  • 0.5 cup melted butter
  • 0.25 cup sugar

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, mix crushed graham crackers, melted butter, and sugar until resembling wet sand. Press into the bottom of a springform pan and bake for 10 minutes. Cool on wire rack.
  • In a large mixing bowl, beat cream cheese until smooth. Gradually mix in sugar and vanilla until fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Gently fold in raspberries and flour into the mixture.
  • Pour cheesecake filling over the crust and smooth the top. Bake for 50-60 minutes until set but slightly jiggly.
  • Allow to cool for an hour, then refrigerate for at least 4 hours or overnight.
  • Serve topped with extra raspberries and whipped cream.

Notes

Make sure the cream cheese is at room temperature to avoid lumps. Gently mix in the raspberries to maintain their shape.
