  • cup Kalamata olives pitted and chopped
  • 1 cup mushrooms sliced
  • 1 cup heavy cream for a creamy sauce
  • 1 cup chicken stock for flavor
  • ½ cup Parmesan cheese grated
  • 2 cups fresh spinach vibrant addition

  • Prepare the Coating: In a low bowl, combine flour, paprika, 1 teaspoon thyme, 1 teaspoon oregano, ½ teaspoon salt, and ½ teaspoon black pepper. Mix thoroughly.
  • Season and Dredge Chicken: Season chicken with remaining salt, pepper, oregano, thyme, and chili flakes. Dredge in flour mixture until fully coated.
  • Sear the Chicken: Heat 2 tablespoon olive oil in a skillet. Cook floured chicken for 3-5 minutes on each side until golden brown. Transfer to a plate to rest.
  • Sauté Aromatics and Vegetables: In the same skillet, add remaining olive oil. Cook garlic, sun-dried tomatoes, olives, and mushrooms for 3-5 minutes until garlic is fragrant.
  • Make the Creamy Sauce: Pour in heavy cream, chicken stock, and Parmesan. Stir and simmer until thickened.
  • Combine Chicken and Sauce: Return chicken to skillet. Cook for an additional 5-7 minutes until chicken reaches 165°F.
  • Final Adjustments and Serve: Taste and adjust seasonings. Serve warm with rice, pasta, or salad.
