For the Gratin

  • 4 tablespoons unsalted butter for greasing the baking dish
  • 2 cups sweet potatoes sliced
  • 1 cup parsnips sliced
  • 1 cup beets sliced
  • 1 cup heavy cream divided
  • ½ ounce Parmesan cheese grated
  • 1 teaspoon fresh minced thyme
  • 1 clove garlic minced
  • 1 cup shredded gruyère for topping
  • to taste salt
  • to taste pepper

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C) and grease a 3-quart oval baking dish with softened unsalted butter.
  • Slice the sweet potatoes, parsnips, and beets into very thin rounds.
  • Pour 4 tablespoons of heavy cream over the sweet potatoes and parsnips, and 2 tablespoons over the beets. Add ½ ounce of grated Parmesan and 1 teaspoon of thyme to each bowl, season, and toss.
  • Pour the remaining ¼ cup of cream into the baking dish, sprinkle with ½ ounce of grated Parmesan, and distribute the minced garlic.
  • Layer the vegetables starting with sweet potatoes, then parsnips, and beets. Repeat until all vegetables are used, season the top layer, and add remaining Parmesan.
  • Cover with aluminum foil and bake for about 30 minutes until vegetables are tender.
  • Remove foil, sprinkle the top with gruyère cheese, and bake uncovered for an additional 18-20 minutes until golden brown.
  • Garnish with fresh thyme leaves and serve warm.

Notes

Slice the vegetables evenly and layer them vertically for best presentation and cooking results. You can prepare the dish a day in advance and refrigerate.
