Ingredients
  

For the Filling

  • 1 fillet Salmon seasoned with salt and pepper
  • 2 cups Assorted crunchy vegetables bell peppers and carrots, chopped
  • 0.5 cup Fresh aromatic herbs cilantro or mint, chopped

For the Wrapping

  • 8 sheets Rice paper for wrapping

Preparation and Baking

  • Preheat your oven to 400°F (200°C).
  • Season the salmon fillet with salt, pepper, and any additional spices. Let it absorb flavors for about 10 minutes.
  • Wash and finely chop the assorted vegetables and aromatic herbs.
  • Soak each rice paper sheet in warm water for about 15 seconds until pliable.
  • Assemble the spring rolls by placing seasoned salmon, vegetables, and herbs in the center of the rice paper.
  • Roll the rice paper tightly around the filling, leaving no gaps.
  • Arrange the rolls seam-side down on a lined baking sheet, leaving space between them.
  • Bake for about 15-20 minutes until golden brown and crispy.
  • Let cool for a couple of minutes on a wire rack before serving.
