  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Step-by-Step Instructions for Southwest Egg Rolls

  • In a large mixing bowl, combine shredded chicken, black beans, corn, cheese, jalapeño, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well and set aside.
  • Warm each tortilla in a skillet over medium heat for about 10-15 seconds on each side. Keep covered with a kitchen towel.
  • Place 2 tablespoons of the filling mixture in the center of a warmed tortilla, fold the sides inwards, and roll from the bottom up. Use water to moisten and seal edges if needed.
  • Heat oil in a deep frying pan to about 2 inches deep over medium heat until shimmering (approximately 5-7 minutes).
  • Fry the egg rolls in batches for 3-4 minutes on each side until golden brown and crispy. Use tongs to turn them.
  • Remove the egg rolls from the oil and drain on a plate lined with paper towels.
  • For baking, arrange the assembled egg rolls on a greased baking sheet, spray the tops, and bake at 425°F (220°C) for 20-25 minutes.
  • Serve warm with your favorite dipping sauces like salsa or guacamole.

Notes
