  • Wash and grate the zucchinis, then squeeze out excess moisture.
  • Mix together the dry ingredients in a bowl: flour, baking powder, baking soda, garlic powder, onion powder, black pepper, and salt.
  • In a separate bowl, whisk the eggs until frothy, then add milk and olive oil.
  • Combine the wet mixture with the dry ingredients, folding gently until just combined.
  • Fold in grated zucchini, Parmesan cheese, and mozzarella cheese.
  • Preheat oven to 375°F (190°C) and prepare the muffin tin.
  • Fill each muffin cup about ¾ full and sprinkle with breadcrumbs.
  • Bake for 20-25 minutes or until golden; check with a toothpick.
