Ingredients
  

Onion and Spinach Pakoras

  • 2 cups Fresh spinach finely chopped
  • 1 small Onion thinly sliced
  • 1 cup Chickpea flour (besan) base for the batter
  • ¼ cup Rice flour adds extra crunch
  • 2 medium Green chilies finely chopped
  • 1 teaspoon Cumin seeds
  • ½ teaspoon Red chili powder adjust to taste
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt to taste
  • ½ cup Water added gradually
  • 2 cups Oil for deep frying

Mint Raita

  • 1 cup Plain yogurt
  • ¼ cup Fresh mint leaves chopped
  • 1 tablespoon Lemon juice
  • ½ teaspoon Salt to taste

Instructions
 

Preparation Steps

  • Rinse the fresh spinach leaves thoroughly to remove grit, then finely chop and set aside.
  • Thinly slice the small onion and place it alongside the spinach.
  • In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, red chili powder, turmeric powder, garam masala, and salt.
  • Gently fold in the chopped spinach, sliced onion, and green chilies into the dry mixture.
  • Gradually add water to the mixture, stirring until a thick batter forms.
  • In a deep frying pan, heat oil over medium heat until hot.
  • Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3-4 minutes.
  • Remove pakoras with a slotted spoon and drain on paper towels.
  • In a bowl, mix yogurt, mint leaves, lemon juice, and salt to prepare the mint raita.
  • Serve hot with the mint raita for dipping.

Notes

Ensure the batter is thick enough to coat the vegetables without being runny to avoid sogginess.
