  • Trim Brussels sprouts, halving them for even cooking.
  • Peel and slice carrots diagonally into ½-inch thick pieces.
  • Dry the vegetables with a towel to remove moisture.
  • In a bowl, whisk together olive oil, maple syrup, vinegar, mustard, garlic, salt, pepper, and spices.
  • Add Brussels sprouts and carrots to the glaze, tossing to coat evenly.
  • Spread the coated vegetables in a single layer on the hot baking sheet.
  • Roast for 15 minutes without stirring, then stir and roast for another 10-15 minutes until tender and browned.
  • Optional: Melt butter and drizzle over the vegetables after roasting.
  • Serve garnished with pecans, cranberries, and herbs.
