For Extra Flavor

  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon red pepper flakes optional, for heat

Instructions

Step-by-Step Instructions

  • Bring a large pot of salted water to a rolling boil over high heat. Add in the gnocchi and cook according to package instructions, usually for about 2-3 minutes, or until they float to the surface. Once cooked, use a slotted spoon to gently remove the gnocchi from the water and set them aside to drain in a colander.
  • In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add the drained gnocchi to the pan, arranging them in a single layer. Cook undisturbed for about 2-3 minutes, allowing them to become golden brown and crispy on one side, then carefully flip to crisp the other sides.
  • Gently stir the gnocchi to ensure they brown evenly on all sides. Continue cooking for another 2-3 minutes, keeping an eye on them to achieve that perfect crispy texture.
  • Once the gnocchi are crispy, reduce the heat to medium and add 2 cloves of minced garlic to the pan. Sauté the garlic for approximately 1 minute, stirring frequently until fragrant, but be careful not to let it burn.
  • Next, toss in 4 cups of fresh spinach, stirring gently to combine with the garlic and gnocchi. Cook for about 2-3 minutes or until the spinach wilts down significantly.
  • Sprinkle salt, black pepper, and optional red pepper flakes over the mixture. Stir well to combine and ensure the flavors meld together beautifully.
  • Finally, stir in 4 ounces of crumbled feta cheese until it’s evenly distributed throughout the dish. Serve immediately for the best flavor!

Notes

Ensure you don't overcrowd the pan when crisping the gnocchi. Always use fresh spinach to maintain texture. Keep an eye on the garlic to prevent burning.
