Step-by-Step Instructions

  • Start by draining the 14 oz extra-firm tofu and wrapping it tightly in a clean kitchen towel. Place a flat plate on top, adding weight to press for 20-30 minutes.
  • While the tofu is pressing, preheat your air fryer to 380°F (190°C) for about 5 minutes, greasing the basket lightly.
  • Once pressed, crumble the tofu into a large bowl until it resembles coarse breadcrumbs.
  • Add the soy sauce, sesame oil, minced garlic, grated ginger, chopped green onions, grated carrot, and optional herbs. Stir until well combined.
  • Mix in the panko breadcrumbs, cornstarch, nutritional yeast, salt, pepper, paprika, and chili flakes until the mixture holds together.
  • If too crumbly, add 1-2 teaspoon water; if too wet, add more breadcrumbs or cornstarch.
  • Using your hands, scoop 1 to 1½ tablespoon of the mixture for each ball, rolling them into 1-1.25 inch diameter balls.
  • In a shallow bowl, combine panko breadcrumbs, cornstarch, and a pinch of salt and pepper. Mix in oil until crumbs are coated.
  • Roll each tofu ball in the breadcrumb mixture, shaking off excess to avoid clumping.
  • Place the coated tofu balls in a single layer in the preheated air fryer, ensuring gaps for air circulation. Optionally spritz with oil.
  • Air-fry at 380°F (190°C) for 10-14 minutes, shaking halfway through until golden brown and crispy.
  • Mix the dipping sauce ingredients in a bowl while tofu balls cook, adjusting flavors to taste.
  • Once cooked, serve hot with the dipping sauce, garnished with green onion, sesame seeds, and a squeeze of lime.
