  • Whisk together 2 cups of all-purpose flour, ½ teaspoon of baking soda, and ½ teaspoon of salt in a medium bowl.
  • Beat together ¾ cup of softened unsalted butter, 1 cup of granulated sugar, and ¼ cup of packed brown sugar until light and fluffy (about 3-4 minutes).
  • Add 1 large egg and 2 teaspoons of vanilla extract to the butter mixture and mix until fully combined.
  • Gradually add the reserved flour mixture to the wet ingredients and mix on low speed until just incorporated.
  • Heat ½ cup of heavy cream in a small saucepan until it begins to bubble, then remove from heat.
  • Whisk in 1 tablespoon of cornstarch until smooth.
  • Allow the cream mixture to cool slightly before folding it into the cookie dough.
  • Drop dollops of the cookie dough onto the baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, looking for lightly golden edges.
