Preparation

  • Add the egg, vanilla extract, and almond extract, mixing until combined.
  • Gradually mix in the dry ingredients until just combined. Then, add sour cream and mix until smooth.
  • Press the dough into the bottom of the prepared springform pan.
  • Bake the cookie crust for 12-15 minutes until golden brown.
  • Once baked, cool the crust to room temperature.
  • In a separate bowl, beat together the cream cheese and sugar until smooth.
  • Add vanilla extract and mix until fully incorporated.
  • Add eggs one at a time, beating after each addition until smooth.
  • Mix in the heavy cream until the batter is smooth.
  • Pour the cheesecake batter over the cooled cookie crust.
  • Bake the cheesecake for 50-55 minutes until the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside for 1 hour.
  • Cool to room temperature, then refrigerate for at least 4 hours or overnight.
