Ingredients
  

For the Lasagna

  • 12 noodles lasagna use whole wheat or gluten-free
  • 2 tablespoons olive oil for sautéing
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced cremini or button mushrooms
  • 4 cups fresh spinach or frozen
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper to taste

For the Cheesy Filling

  • 2 cups ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese divided
  • 1 cup grated Parmesan cheese

For the Sauce Layer

  • 2 cups marinara sauce
  • ¼ teaspoon nutmeg (optional)

Instructions
 

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • Boil a large pot of salted water and cook the lasagna noodles according to package instructions until al dente.
  • In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 5 minutes until translucent. Stir in minced garlic and sliced mushrooms, cooking for an additional 5-7 minutes.
  • Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Add oregano, basil, salt, pepper, and optional nutmeg. Remove from heat.
  • In a mixing bowl, combine ricotta cheese, egg, 1 cup of mozzarella cheese, and half of the grated Parmesan cheese until smooth.
  • Spread a thin layer of marinara sauce in a baking dish. Layer 4 noodles, half of the ricotta mixture, half of the spinach mushroom mixture, and a third of the remaining marinara sauce. Repeat layers.
  • Add the last 4 noodles on top and spread remaining marinara sauce. Sprinkle remaining mozzarella and Parmesan cheese over the top.
  • Cover with aluminum foil and bake for 25 minutes. Then remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  • Let the lasagna cool for 10-15 minutes before serving.

Notes

Let leftovers cool completely before storing in the fridge or freezer. Reheat thoroughly before serving.
