Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add 2 tablespoons of olive oil. Once shimmering, add 1 teaspoon of minced garlic and sauté for about 30 seconds.
  • Add 1 cup of chopped spinach to the skillet and cook for about 3–4 minutes until wilted.
  • In a mixing bowl, combine 1 cup of chopped cooked shrimp, sautéed spinach, 1 tablespoon of lemon juice, and salt and pepper to taste. Mix thoroughly.
  • Stuff each pasta roll with the shrimp and spinach mixture generously.
  • Place the stuffed pasta rolls in a baking dish and pour 1 cup of roasted red pepper cream sauce over the top.
  • Sprinkle ½ cup of shredded cheese over the sauced pasta rolls.
  • Bake in the preheated oven for about 30–35 minutes until the cheese is bubbly and slightly golden.
  • Remove from oven, let cool for a few minutes, serve warm, and enjoy.

Notes
