Step-by-Step Instructions

  • Start by bringing a large pot of salted water to a boil over high heat. Once bubbling, add long-cut pasta and cook until al dente, about 8-10 minutes.
  • Drain the jarred roasted red peppers, squeezing out excess brine. Set aside in a bowl.
  • In a large pan, melt butter over medium heat. Add diced onion and sauté for 5-7 minutes until soft and golden.
  • Add minced garlic to the pan and cook for 1 minute, stirring constantly.
  • Transfer the onion and garlic mixture to a blender with roasted red peppers and blend until smooth.
  • Return the sauce to the pan and stir in heavy cream. Simmer for 3-5 minutes.
  • Add Parmesan cheese, parsley, smoked paprika, salt, and pepper, stirring well.
  • Drain the pasta and add it to the sauce, tossing gently to coat. Add reserved pasta water if the sauce is too thick.
  • Serve immediately, garnished with extra Parmesan cheese and chopped parsley.

Notes

Ensure cream is at room temperature to prevent curdling. Use fresh Parmesan for better melting. Store leftovers in an airtight container for up to three days.
