Step-by-Step Instructions

  • In a large pan, heat 1 tablespoon of olive oil over medium heat. Add 4 slices of diced bacon and cook until crispy, about 6–8 minutes. Remove bacon and set aside, leaving fat in the pan.
  • Add the chopped onion and sauté for about 5 minutes until soft. Stir in 2 minced garlic cloves and cook for another minute until fragrant.
  • Pour in 1 cup of Arborio rice, stirring frequently for about 2 minutes until slightly translucent and lightly toasted.
  • Pour in ½ cup of dry white wine, stirring constantly until absorbed, about 3–4 minutes.
  • Begin adding 4 cups of warmed broth, one ladle at a time, stirring frequently and pausing until each is nearly absorbed, for about 18 to 20 minutes.
  • Stir in ¾ cup of canned pumpkin puree and mix until fully incorporated and heated through, about 2 minutes.
  • Remove from heat and add 1 tablespoon of unsalted butter, the crispy bacon, and ½ cup of Parmesan cheese, stirring until combined.
  • Season with salt and pepper to taste, garnish with fresh parsley, and serve.

Notes

Use warm broth for consistency, and freshly grated Parmesan for best flavor.
