Step‑by‑Step Instructions

  • Bring a large pot of salted water to a vigorous boil. Add the gnocchi and cook until they rise to the surface, about 2-3 minutes. Drain, reserving ½ cup of pasta water.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes. Stir in garlic and cook for another minute.
  • Pour in pumpkin puree and heavy cream. Add grated Parmesan cheese and stir well. Simmer for about 5 minutes, seasoning with nutmeg, salt, and pepper.
  • Stir in chopped spinach and wilt for 2-3 minutes. Fold in the cooked gnocchi to coat in the sauce.
  • If too thick, add reserved pasta water. Adjust seasonings to taste.
