  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for about 5-7 minutes until softened.
  • Stir in minced garlic and chopped fresh sage. Cook for an additional minute.
  • Pour in pumpkin puree, stirring to combine. Cook for 2-3 minutes.
  • Add heavy cream and stir until smooth. Gradually mix in grated Parmesan cheese.
  • Season the sauce with salt, black pepper, and red pepper flakes. Adjust seasoning to taste.
  • Lower heat and let the sauce simmer for about 10-15 minutes. Stir occasionally.
  • Meanwhile, boil a pot of salted water and cook pasta according to package directions until al dente.
  • Remember to reserve about ½ cup of the pasta water before draining the pasta.
  • Add the drained pasta to the skillet with the sauce, mixing to coat it evenly.
  • If needed, add reserved pasta water gradually to adjust sauce consistency.
  • Fold in half of the crumbled feta cheese.
  • Melt butter and drizzle over the pasta before serving.
  • Serve immediately while hot, garnished with remaining feta cheese and toasted pumpkin seeds.
