Step-by-Step Instructions

  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes. Add garlic and stir for another minute.
  • Add diced tomatoes, drained cannellini beans, and vegetable broth to the pot. Stir in dried basil and oregano.
  • Bring the soup to a boil, then reduce heat to low and simmer uncovered for 15 minutes.
  • Using an immersion blender, puree the soup until smooth. Alternatively, blend in batches in a regular blender.
  • Return the pureed soup to the pot, stir in grated Parmesan cheese, and season with salt and pepper.
  • Allow the soup to cook for an additional 5 minutes, stirring occasionally before serving.
