  • 2 cups cooked rice or cooked quinoa for gluten-free option
  • 1 cup pineapple fresh or canned, crushed or diced
  • 1 cup coconut cream or coconut milk; heavy cream for richer flavor

For Sweetness

  • ¼ cup sugar adjust according to taste or replace with honey
  • 1 teaspoon vanilla extract opt for real vanilla for better aroma

Optional Add-ins

  • 1 cup mini marshmallows omit for a less sweet version
  • ½ cup toasted macadamia nuts substitute with almonds if desired

Instructions
 

Prepare the Pudding

  • In a large mixing bowl, combine 2 cups of cooked rice, 1 cup of pineapple, 1 cup of coconut cream, ¼ cup of sugar, and 1 teaspoon of vanilla extract. Gently fold the mixture together with a spatula for about 2 minutes until well combined.
  • Cover the bowl tightly with plastic wrap and place it in the refrigerator to chill for 1-2 hours.
  • After chilling, stir the pudding gently to restore its creamy texture. Serve in individual dishes.
  • Garnish with mini marshmallows or toasted macadamia nuts just before serving.

Notes

Cool cooked rice before mixing; adjust sweetness according to pineapple ripeness. Store leftovers in an airtight container for up to 3 days.
