  • In a large pot, heat 1 tablespoon of olive oil over medium heat until shimmering. Add 1 cup of diced onion and 1 cup of diced bell pepper, sautéing for about 5 minutes until they become soft and translucent.
  • Next, add 1 cup of cooked, shredded chicken, 1 cup of corn, 1 cup of black beans, and 1 cup of diced tomatoes into the pot. Pour in 4 cups of chicken broth and sprinkle with 1 cup of taco seasoning.
  • Increase the heat to high and bring the mixture to a gentle boil, which should take around 5 minutes. Once at a rolling boil, reduce the heat to low and let it simmer gently for about 10 minutes.
  • Pour in 1 cup of heavy cream, stirring well to combine. Allow the soup to cook for an additional 5 minutes.
  • Ladle the hot, creamy chicken taco soup into bowls. Serve immediately while it's warm.

Notes
