Preparation Steps

  • Peel the potatoes and cut them into even chunks. Place them in a large saucepan, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 15–20 minutes until fork-tender.
  • Slice the spring onions, separating the white and pale green parts from the dark green tops. Set the dark green tops aside for garnish.
  • In a small saucepan, combine milk and butter over low heat. Stir until the butter melts. Add the sliced white and pale green spring onions and simmer for 2 minutes.
  • Drain the cooked potatoes and return them to the saucepan. Mash the potatoes until smooth and creamy.
  • Gradually pour the milk and onion mixture into the mashed potatoes, stirring continuously until well combined.
  • Season with salt and black pepper to taste. Transfer to a serving dish and garnish with the reserved dark green spring onion tops.

Notes

Use starchy potatoes like Russets for the best texture. Watch the cooking time to ensure perfect mash. Warm your milk and butter before mixing for the best results.
