Ingredients
  

For the Peppers

  • 12 pieces mini sweet peppers

For the Filling

  • 4 oz cream cheese, softened
  • ¼ cup shredded cheddar cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • salt and pepper to taste

For Garnish

  • chopped chives for garnish

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Cut the tops off each mini sweet pepper and remove the seeds and membranes, keeping the peppers intact.
  • In a mixing bowl, combine cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  • Fill each mini pepper with the cheese mixture, slightly overstuffing them, and arrange on the baking sheet.
  • Bake for 15-20 minutes until the peppers are tender and cheese is melted and bubbly.
  • Let the stuffed peppers cool for a few minutes, then sprinkle with chopped chives before serving.
  • Serve warm and enjoy with a spicy dipping sauce if desired.
