  • In a large mixing bowl, combine 1 cup of mayonnaise and 1 cup of sour cream. Add in ½ cup of chopped cilantro, 2 minced cloves of garlic, 1 teaspoon of chili powder, and ½ teaspoon of cayenne pepper. Stir until creamy.
  • Gently fold in ½ cup of crumbled Cotija cheese, ½ cup of grated Parmesan cheese, and 6 cups of cooked corn kernels.
  • Season with salt and pepper to taste.
  • Add the juice of one lime and stir to combine.
  • Transfer the dip to a baking dish and spread it evenly.
  • Bake for 25–30 minutes until golden brown and bubbly.
