  • Blend the cream cheese, pecans, cranberries, honey, vanilla extract, and optional cinnamon in a mixing bowl until smooth.
  • Make a small slit in each pitted Medjool date to create a pocket for the filling.
  • Fill each slit date generously with the cream cheese mixture.
  • Arrange the filled dates on a parchment-lined baking sheet and sprinkle sea salt on top.
  • Bake the stuffed dates in the preheated oven for 10-15 minutes, until the cream cheese is warm and slightly golden.
  • Cool for a few minutes, then garnish with fresh parsley if desired.
