  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup fresh cranberries chopped if large
  • 1 tablespoon orange zest
  • 0.5 cup orange juice freshly squeezed
  • 2 large eggs
  • 0.5 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it.
  • In a bowl, whisk together 2 cups of all-purpose flour, 1 cup of granulated sugar, ½ cup of packed brown sugar, 1 tablespoon of baking powder, and ½ teaspoon of salt.
  • Gently fold in 1 cup of chopped fresh cranberries and 1 cup of chopped pecans into the dry mixture.
  • In a separate bowl, combine the zest of 1 orange, ½ cup of orange juice, 2 large eggs, ½ cup of vegetable oil or melted butter, and 1 teaspoon of vanilla extract. Whisk until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined, keeping a few lumps.
  • Evenly divide the batter among the muffin cups, filling them two-thirds full. Optionally sprinkle with additional pecans and turbinado sugar.
  • Bake for 18 to 22 minutes, or until a toothpick comes out clean from the center of a muffin.
  • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes
