For the Soup Base

  • 1 tablespoon Olive oil a healthy fat that helps sauté the aromatics
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots peeled and diced
  • 2 stalks Celery diced
  • 1 medium Zucchini diced
  • 6 cups Low-sodium vegetable broth
  • 1 can (14.5 oz) Diced tomatoes undrained

For the Seasoning

  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • Salt and freshly ground black pepper to taste

For the Tortellini & Greens

  • 1 package (9 oz) Cheese tortellini either fresh or frozen
  • 2 cups Fresh spinach leaves roughly chopped

For Garnishing

  • 1 tablespoon Fresh parsley chopped, optional
  • Grated Parmesan cheese optional for topping

Instructions
 

Step-by-Step Instructions

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 2–3 minutes until the onion turns translucent.
  • Incorporate the diced carrots and celery into the pot, cooking for another 5 minutes until they begin to soften.
  • Add the diced zucchini to the pot and continue to cook for an additional 3 minutes, stirring occasionally.
  • Pour in 6 cups of low-sodium vegetable broth and a can of undrained diced tomatoes. Stir in 1 teaspoon each of dried basil and oregano, and season with salt and pepper to taste.
  • Reduce the heat to low, cover the pot, and let it simmer for 15–20 minutes.
  • Add the tortellini to the pot and cook according to the package instructions, usually around 7–10 minutes.
  • Stir in 2 cups of roughly chopped fresh spinach and let it cook for an additional 2 minutes.
  • Taste the soup, adjusting the seasoning with more salt and pepper if necessary. Remove the pot from heat.
  • Ladle the soup into bowls, garnishing with chopped parsley and grated Parmesan cheese, if desired.
