  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper.
  • Combine 1 cup of melted unsalted butter, 1 cup packed light brown sugar, and ½ cup granulated sugar in a large bowl. Whisk until smooth.
  • Add 2 large eggs one at a time, whisking thoroughly after each; then stir in 1 teaspoon of vanilla extract and 1 cup of pumpkin puree.
  • In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of salt, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon ground ginger, and ¼ teaspoon ground cloves.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in 1 cup of white chocolate chips and ¾ cup of chopped pecans, if desired.
  • Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes.
  • Remove from the oven and let cool completely in the pan on a wire rack.

Notes
