Preparation Steps

  • Heat the oil in a medium cooking pot over medium heat until shimmering.
  • Add chopped onion, diced celery, diced carrots, and minced garlic. Sauté for 5-7 minutes until tender and fragrant.
  • Stir in all-purpose flour and cook for about 1 minute.
  • Gradually pour in chicken stock while stirring. Bring to a gentle simmer.
  • Mix in Italian seasoning, salt, and ground black pepper. Allow to simmer for 2-3 minutes.
  • Add shredded turkey and uncooked orzo. Bring to a boil for a brief moment, then reduce heat to low and simmer for 10 minutes.
  • Stir in heavy cream and baby spinach. Cook for an additional 2-3 minutes until spinach wilts.

Notes
