Cooking Steps

  • Sauté garlic and onion in oil over medium heat until fragrant and translucent, about 5 minutes.
  • Add ground meat, breaking it apart, and cook until browned, about 7-10 minutes.
  • Stir in canned pumpkin and mix well for about 2 minutes.
  • Pour in black beans, diced tomatoes, and vegetable broth. Simmer for about 5 minutes.
  • Add chili powder, cumin, smoked paprika, salt, and pepper. Cook for additional 10-15 minutes.
  • Check the consistency, adding more broth if necessary, and adjust seasoning to taste.
  • Remove from heat, ladle into bowls, and serve.
  • Top with sour cream, cilantro, cheese, and green onions.
