Step-by-Step Instructions

  • In a medium-large pot, heat the olive oil over medium-high heat for about 2 minutes until it shimmers. Add ground beef, stirring well to break it up. Cook for 5-7 minutes until browned.
  • Incorporate the finely chopped onion and minced garlic into the pot. Cook for 3-4 minutes until the onion is soft and translucent.
  • Add the chopped cabbage, sliced carrots, dry barley, and bay leaves into the pot. Stir thoroughly and cook for an additional 2 minutes.
  • Pour in the tomato sauce, soy sauce, miso paste, and water. Mix until well combined and bring to a boil.
  • Reduce heat to low, cover the pot, and let the soup simmer gently for 1 hour.
  • Carefully remove the pot from heat. Ladle the soup into bowls and garnish with fresh parsley.
