For the Base

  • 1 cup red or green lentils packed with protein and fiber
  • 1 tablespoon olive oil helps to sauté the aromatics
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated

For the Spice Mix

  • 1 teaspoon turmeric powder anti-inflammatory properties
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper

For the Broth

  • 4 cups vegetable broth or water
  • 1 cup diced tomatoes canned or fresh

For the Greens

  • 2 cups kale or spinach chopped
  • 1 tablespoon lemon juice to brighten flavors

For Garnish

  • fresh cilantro or parsley optional

Step-by-Step Instructions

  • Rinse 1 cup of lentils under cold water in a fine mesh strainer to remove any debris. Set them aside to drain.
  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  • Add 3 minced garlic cloves and 1 tablespoon of grated fresh ginger, cooking for another 2 minutes until fragrant.
  • Stir in 1 teaspoon each of turmeric powder, cumin, and coriander, along with 1 teaspoon of salt and ½ teaspoon of black pepper. Allow the spices to bloom for about 1 minute.
  • Add the rinsed lentils and 4 cups of vegetable broth. Bring to a rolling boil, then lower the heat and let it simmer covered for about 5 minutes.
  • Mix in 1 cup of diced tomatoes. Simmer uncovered for 20-25 minutes, stirring occasionally, until lentils are tender.
  • Stir in 2 cups of chopped kale or spinach. Cook for an additional 5 minutes until the greens are wilted.
  • Remove from heat and add in 1 tablespoon of lemon juice. Stir to enhance the flavor.
  • Ladle into bowls and garnish with fresh cilantro or parsley, if desired.

Notes

Rinse lentils thoroughly to avoid grit. Bloom spices in hot oil for maximum flavor.
