Step-by-Step Instructions

  • Heat 2 tablespoons of olive oil in a large pot over medium heat. Add finely chopped onions, carrots, and celery, sautéing until softened and the onions become translucent, about 5–7 minutes.
  • Stir in minced garlic and cook until fragrant and golden, about another minute.
  • Mix in 2 tablespoons of tomato paste along with dried herbs and stir for another 2–3 minutes.
  • Pour in 6 cups of broth and add cannellini beans; increase heat to a gentle boil, then reduce to simmer for about 5 minutes.
  • Stir in 1 cup of small pasta and cook until al dente, about 8–10 minutes.
  • Season with salt and pepper to taste, and if using, sprinkle in grated Parmesan cheese before serving.
  • Garnish with fresh parsley and a drizzle of olive oil.
