Ingredients
  

For the Syrup

  • ½ cup sugar
  • ½ cup water
  • 4 sprigs fresh thyme

For the Punch

  • 2 tablespoons fig jam
  • 2 oz gin
  • 1 oz fresh lemon juice
  • 1 oz thyme syrup homemade
  • 3 oz sparkling water
  • ice clear ice

Preparation Steps

  • In a small saucepan, combine ½ cup sugar, ½ cup water, and 4 sprigs of fresh thyme. Bring to a simmer for about 5 minutes, stirring until the sugar dissolves. Remove from heat, cool, and strain to create thyme syrup.
  • Juice a lemon to extract about 1 oz of fresh lemon juice, straining out any seeds.
  • In a shaker, combine 2 tablespoons of fig jam, 2 oz of gin, 1 oz of fresh lemon juice, and 1 oz of thyme syrup. Stir or shake until dissolved.
  • Strain the mixture into glasses filled with clear ice.
  • Top each glass with about 3 oz of sparkling water, gently pouring over the back of a spoon. Stir gently.
  • Garnish with a sprig of thyme and a slice of fig. Serve chilled.

Notes

Choose fresh ingredients for the best flavor. Adjust lemon juice or syrup to taste. Use clear ice for better presentation.
