  • In a food processor, combine cottage cheese, warm water, instant yeast, granulated sugar, and table salt. Process until smooth, about 20 to 30 seconds.
  • Add cilantro, bread flour, and chili crisp to the processor. Pulse for about 8 to 10 seconds until the dough begins to come together.
  • Scrape the dough into a greased bowl, cover, and let rise until increased in volume by about 1 ½ times, approximately 30 to 45 minutes.
  • Transfer the dough to a floured surface. Knead gently for about 30 to 60 seconds.
  • Divide the dough into four equal pieces, shape into balls, and cover to rest for about 15 to 30 minutes.
  • Preheat a skillet over medium-high heat. Roll each ball into a round and cook for 1 to 2 minutes on each side.
  • For a crispy finish, broil on a greased sheet for 1 to 3 minutes, flipping halfway through.
  • Wrap warm flatbreads in a towel and brush with chili crisp before serving.

Notes

For best results, use whole milk cottage cheese and ensure the water is warm, not hot. Allow the dough plenty of time to rise for fluffy flatbreads.
