For the Base

  • 1 can Chickpeas drained and rinsed
  • 2 medium Avocado diced
  • 75 g Feta Cheese crumbled

For the Freshness

  • ½ medium Red Onion thinly sliced
  • ¼ cup Fresh Parsley chopped
  • ¼ cup Fresh Mint chopped

For the Dressing

  • ¼ cup Olive Oil extra virgin
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper

Preparation Steps

  • Drain and rinse the canned chickpeas under cold water to remove excess sodium. Pat them dry lightly.
  • In a large bowl, combine the rinsed chickpeas, diced avocado, crumbled feta, sliced red onion, chopped parsley, and chopped mint. Gently fold together.
  • In a small bowl, whisk olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.
  • Drizzle the dressing over the salad mixture and toss gently to coat without mashing the avocado.
  • Serve immediately or chill in the refrigerator for about 30 minutes.

Notes

Store leftovers in an airtight container; add extra lemon juice to prevent browning of avocado.
