  • 1 cup jasmine rice
  • 2 cups low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon olive oil

Step-by-Step Instructions

  • Rinse jasmine rice under cold water until the water runs clear. Bring chicken broth to a boil in a medium saucepan, add rice, reduce heat to low, cover, and cook for 15-20 minutes until liquid is absorbed.
  • Fluff the rice gently with a fork. Stir in grated Parmesan cheese, garlic powder, and olive oil. Keep warm.
  • Season chicken with salt and pepper. In a large skillet, warm olive oil over medium-high heat. Add chicken, cook for 5-7 minutes until golden and cooked through.
  • Remove chicken from skillet, add minced garlic and red pepper flakes, sauté for 1 minute until fragrant.
  • Pour in white wine, scrape up browned bits, simmer for 1-2 minutes.
  • Add lemon juice and chicken broth, bring to a simmer for 3-4 minutes.
  • Return chicken to skillet, stir in butter until melted and heated through.
  • Serve garlic Parmesan rice topped with chicken and sauce, garnish with fresh parsley.
