  • Start by cutting the chicken breasts into fry-shaped strips, roughly 1-inch wide for even cooking. Set aside.
  • In a shallow dish, combine 1 cup of flour with garlic powder, onion powder, paprika, salt, and pepper. Stir until well distributed.
  • In another shallow dish, crack the two eggs and whisk until thoroughly combined and frothy.
  • Next, pour 1 cup of panko breadcrumbs into a separate shallow dish, ensuring they are evenly spread out.
  • Take each chicken strip and first coat it in the seasoned flour mixture, then dip it into the beaten eggs, and finally roll it in the panko breadcrumbs until fully covered.
  • Take half of the coated chicken strips and place a small amount of shredded mozzarella cheese in the center of each. Seal with another chicken strip.
