  • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Halve the baby gold potatoes and rinse them under cold water. Pat them dry.
  • Toss the potatoes with olive oil, garlic powder, smoked paprika, kosher salt, and black pepper. Roast for 25–35 minutes.
  • Thinly slice the Brussels sprouts and place them in a mixing bowl.
  • Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, pepper, and minced garlic for the dressing.
  • Combine flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper for the chicken coating.
  • Dip each chicken piece into the egg wash and then into the flour mixture to coat thoroughly.
  • Fry the chicken in heated oil for 3–5 minutes per side until golden brown. Drain on paper towels.
  • Combine hot sauce, butter, honey, garlic powder, and salt in a saucepan over low heat until smooth.
  • Toss the fried chicken in the buffalo sauce and coat evenly.
  • Assemble the bowls with crispy potatoes, Brussels sprouts, buffalo chicken, and garnishes.
  • Serve immediately while hot and crispy.
