  • 4 cups shredded carrots washed and peeled
  • ¼ cup chopped fresh herbs cilantro and mint

For the Dressing

  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce can substitute with gluten-free
  • 1 tablespoon honey or maple syrup adjust to taste
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger

For Topping

  • 1 tablespoon sesame seeds sprinkle on before serving

Preparation Steps

  • Wash and peel the carrots, then shred them into fine pieces using a grater or food processor.
  • In a large bowl, combine the 4 cups of shredded carrots with ¼ cup of freshly chopped herbs.
  • In a small bowl, whisk together 2 tablespoons of sesame oil, 1 tablespoon of soy sauce, 1 tablespoon of honey or maple syrup, 1 tablespoon of rice vinegar, and 1 teaspoon of grated ginger.
  • Pour the dressing over the carrot and herb mixture and toss gently for 1-2 minutes.
  • Sprinkle 1 tablespoon of sesame seeds over the salad before serving.
  • Serve immediately in chilled bowls or plates for best flavor.
