  • Preheat your oven to 350°F (175°C) and prepare a 9-inch cake pan by lining it with parchment paper and greasing it with butter.
  • Arrange the peach wedges in the pan, starting from the center and spiraling outward. Sprinkle ¼ teaspoon of cinnamon over the peaches.
  • Combine ¼ cup of water and ½ cup of sugar in a saucepan, heating until it turns light amber (about 10-15 minutes).
  • Remove the caramel from heat, add 1 tablespoon of bourbon, and pour it over the peaches.
  • Cream together 8 tablespoons of butter and ¾ cup of sugar until light and fluffy (about 3 minutes).
  • Incorporate 3 eggs, then mix in ½ teaspoon of vanilla extract and 2 tablespoons of bourbon.
  • Mix 1 cup of all-purpose flour, ¼ cup of almond flour, 1 teaspoon of baking powder, and ¼ teaspoon of cinnamon. Gradually add to the wet ingredients.
  • Pour the batter over the peaches in the pan, smoothing the top.
  • Bake for 30-35 minutes, checking for doneness with a toothpick.
