Ingredients
  

For the Salad

  • 1 can Chickpeas, drained and rinsed
  • 1 medium Cucumber, diced
  • 1 medium Red Bell Pepper, diced
  • 1 cup Cherry Tomatoes, halved
  • ½ medium Red Onion, finely chopped
  • 1 cup Feta Cheese, crumbled
  • ¼ cup Parsley, chopped

For the Dressing

  • 3 tablespoons Lemon Vinaigrette Adjust lemon juice and olive oil to taste.

Preparation

  • Wash and dry the vegetables. Dice cucumber and red bell pepper, halve cherry tomatoes, and chop red onion and parsley.
  • In a large mixing bowl, combine the drained chickpeas, diced cucumber, bell pepper, cherry tomatoes, and chopped onion, mixing gently.
  • Crumble feta cheese over the salad mixture and fold gently until evenly distributed.
  • Drizzle lemon vinaigrette over the salad and toss gently to coat the ingredients.
  • Serve immediately or refrigerate in an airtight container for up to 5 days. Let sit for 30 minutes before serving for better flavor.
