Begin by cooking the bacon strips in a large skillet over medium heat, allowing about 10 minutes for them to become crispy. Make sure to turn them occasionally. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. After cooling, crumble or dice the bacon into about ½ cup pieces and set aside.
In a large mixing bowl, combine the ground beef and add the crumbled bacon. Use an 80/20 blend of ground beef for the best flavor. Infuse this mixture with flavor.
Add 1 cup of shredded cheddar cheese, 2 tablespoons of ranch seasoning, and ¼ cup of sour cream to the mixture. Gently mix together using your hands until well blended.
If adventurous, sprinkle in 1 tablespoon of Rocky Mtn Beef Rub for an extra layer of flavor. Combine until ready for shaping into patties.
Divide the mixture into 6 equal portions, roll each into a ball, then press down to form a patty and make a small divot in the center.
Heat a greased griddle or grill over medium-high heat (350-375°F). Place patties on the cooking surface, cooking undisturbed for about 5 minutes.
After 5 minutes, flip the patties and cook for another 4 minutes.
Add cheddar cheese to the patties and cover with the grill lid to melt the cheese for about 1 minute.
While the cheese is melting, toast the hamburger buns cut-side down on the griddle for 1-2 minutes until golden brown.
